Simple Cheesecake Recipe

Hola mi gente! While living in New York or even visiting for the first time you always ask about the food. New York is known for hot dogs, pizza and cheesecake. I personally love cheesecake. But, I could never find one that I really enjoyed or one that didn’t make a hole in my pocket. I decided to learn to make my own cheesecake. It was just something I decided to do for myself. But when I let some skeptical people try my cheesecake they harassed me for more. For example, my son and husband hated cheesecake that was before they had mine. Now when I say I am baking a cheesecake I receive dozens of phone calls from people requesting I make them a pie (or 2). Even my mother whom was just released from the hospital called me up and asked if I could bake her a cheesecake. Now I have different variations of this awesome dessert, but I am going to share with you the simplest one and you can add anything to it if you want. So here we go.

What you need:

-graham cracker pie crust

-2 eggs, beaten individually

-1/2 cup sugar

-1 tablespoon vanilla extract

-2 8 Oz packages of Philly cream cheese ( do not get the cheap stuff!)

-mixer (stand mixer, hand mixer, or blender)

What you do:

-preheat oven to 350’F

-in a mixing bowl, mix sugar, 1 egg, vanilla, 1 cream cheese block till smooth

-add 2nd cream cheese block and egg mix until smooth

-beat the mixture until it’s very smooth (no lumps what so ever)

-pour mixture into your pie crust

-place in oven and bake at 350’F for 40 minutes

-if after 40 mins your pie is too pale bake for a few more minutes until you get the gold color you want

-let cool for about 15 minutes

-add any fruits you want on top after it has cooled or serve it plain
